This will soon become....

A broccoli, carrot, celery, onion, red pepper, creamy, cheesy soup. Made exclusively with vegetables from our chicken scraps haul this week (plus spices, broth, cheese, and milk). The chickens got oodles of scrap lettuce and we also have some purple cabbage in bags we can use. Plus, each of the kids and myself had one of those individually prepackaged salads for lunch with the croutons and dressing inside that were going to be thrown in the (gasp!) trash had we not rescued them. Yes! These kids eat salad! They were actually pretty excited about it today. (Poor homeschooled country chitlins, doesn't take much to get them all reved up...) Apparently, even lettuce is fun when it comes in your very own little plastic bowl.
